Spicy Cajun Chicken Pasta w/ Recipe

It's time to try something new! After going through the regular motions of our staple dinners night after night, I was running out of ideas of what to make and we were getting tired of going through the cycle. I guess that was a sign, telling me it's time to try something new; so, I took to Pinterest in search of something good. I came across a dish via skinnytaste. The picture was mouth watering and after looking at the recipe, I decided it was reasonable to make, considering I already have more that half of the ingredients on hand.

I'll have to say this is probably one of the best pasta dish I've made so far. It very tasty and it has a creamy feel to it. To be honest I'm not a big fan of sliced or diced peppers and onions in my food, which means I find myself picking it out of the dish so often. But this was a completely different story; the whole thing was so good and all the ingredients worked together so well that I ate every single sliced peppers and onions on my plate. I didn't even notice while eating them.

Ingredients
8 ounces uncooked pasta (I might have used a tad bit more)
1 1/2 cup cooked shrimp
2 large chicken breast (cut into strips)
2 tbsp Cajun seasoning
1 tbsp olive oil
1 medium red bell pepper
1 medium yellow bell pepper
1/2 red onion
3 cloves garlic
1 large tomato
1 cup low sodium chicken broth
1/3 cup reduced fat milk
1 tbsp flour
3 tbsp cream cheese
1 tsp black pepper
1/2 tsp garlic powder
1 tbsp crushed red pepper
salt to taste
cooking spray

Directions 
1. Prep all vegetables. Slice red and yellow pepper and onions. Mince garlic, and dice tomatoes


2.  In a blender make a slurry by combining milk, flour and cream cheese. Set aside


3. Season chicken generously with Cajun seasoning


4. Prepare pasta in salted water according to package directions
5. Heat a large nonstick skillet over medium-high heat; spray with cooking spray and add half of the chicken. Saute 5 to 6 minutes or until done, set aside on a plate and repeat with the remaining chicken. Set aside


 6. Add olive oil to the skillet and reduce to medium; add bell peppers, onions, and garlic to skillet, saute 3-4 minutes


7.  Add tomatoes and saute 3-4 more minutes or until vegetables are tender
8.  Season with salt to taste (I didn't add any extra salt as the pasta is already salted and I used a lot more Cajun seasoning), garlic powder, black and crushed pepper. Reduce heat to medium-low; add chicken broth and pour in slurry stirring about 5 minutes


9.  Return chicken to skillet and add shrimp, cook for some few minute until hot, then add pasta. Toss well to coat and enjoy!
