Pan Fried Tilapia and Saute Zucchini w/ Recipe

The thought has definitely crossed my mind. Once I start working again, will I still have time to think and plan dishes ahead of time. Will I still have the time to make anything fancy shanzy or is it going to be back to the basics with the exception of weekends. Well, we'll find out soon. I remember when it was just me, most nights when I get home from work, I'm usually too tired, so I just eat whatever I have in my fridge or cabinet. Those days are long gone now, because I have one more mouth I have to think about and make sure is well fed. I think this dish is one of those dishes I can whip up without much thought or planning; I'm going to be needing more of those.

Ingredients
4 Tilapia
1/8 cup flour
1 tsp seafood seasoning
Salt to taste
Pepper to taste
4 tbsp of oil, divided
1/2 onions, chopped
2 tsp garlic, minced, divided
2 log Zucchini
1 tsp of butter
1/2 tbsp of lemon juice


Directions
1. Combine flour, seafood seasoning, salt and pepper and mix
2. Insert fish in flour and coat evenly
3. Heat up a frying with 2tbsp of oil, once hot place fish in pan and fry for about 1 minute each on both sides
4. Once done, transfer into the oven at 300 degrees F for 5 minutes
5. Heat up another pan with the other 2tbsp of oil, combine chopped onions, 1tsp garlic, salt and pepper. saute for 3 - 5 minutes
6. Add zucchini, cook for another 2 - 3 minutes, remove from heat and set aside
7. Remove fish from pan, and reheat pan, scrap remnants, melt butter; add lemon juice and remaining 1tsp garlic. Pour over tilapia as sauce
8. Serve and Enjoy!
