Dinner For Two

Grilled Orange Juice Marinaded Fish 
with 
Mango and Cucumber Salsa 
and 
Side Salad with Honey Mustard Vinaigrette

Yea, I know, it sounds like a lot. I love when I start doing something and it eventually turns into more than what I was planning. This dinner started out with the fish and before I knew it, I will making the salsa. I knew that wasn't going to be enough, I needed something to bring it all together and I was trying as much as possible to refrain for doing any kind of rice; that's how I ended up with the salad. Once I was done making everything, I knew I didn't want this to be a regular dinner, I wanted it to be intimate. I guess the food did set the mood. After the delicious, flavorful and intimate dinner, we headed for the movies.




Fish Ingredients
4 fish fillet
1/2 cup orange juice
1/8 cup olive oil
2 garlic, minced
1/2 tsp salt
1 tsp pepper

Directions
1. Combine orange juice, olive, oil, salt and pepper in a large flat bowl. Big enough that fish can be placed side by side and not on top of each other
2. Place the fish in the marinade and let sit for 15mins in the fridge
3. Place on grill and cook about 1min on each side.

Salsa Ingredients
1 1/2 cup mango, diced
1cup cucumber, diced
1 tbsp cilantro, chopped
1 lime zest
1 lime juice
1/2 med onion, diced
3/4 cup tomato, diced
1/2 tsp salt

Directions
Combine all ingredients. Zest lime first, them extract juice. Refrigerate for at least 30mins before serving.

Salad Ingredients
2 heads of romaine heart
1 1/2 cup shredded cabbage
1 cup shredded carrot
