Nigerian Crepe w/ Recipe

I'm not a big breakfast person, even though they say it is the most important meal of the day. That might have something to do with the fact that I'm not a morning person either. Most times I take the easy way out with cereal or oat meal. But, when I do decide to go all out and make breakfast, it has to be legit. So, here's my Crepe recipe. This is so delicious, I crave it more often than not. I think it's a big big hit with hubby also, he couldn't stop raving about it the whole time he was eating it. Needless to say this crepe will be chosen over  my regular pancakes now and I'm perfectly okay with that.












Ingredients
1 cup flour
2 eggs
1 cup milk
2 tablespoons of butter
1/4 cup water
1/4 tsp salt
1/2 tsp ground chilli pepper
1/4 tsp nutmeg
2 tbsp sugar
Vegetable oil for frying

Directions
1. Melt butter in a bowl in the microwave
2. Combine eggs with melted butter and whisk together till smooth
3. Add milk and water to egg mixture and mix well
4. In another bowl, combine flour, salt, sugar, nutmeg, and chilli pepper and mix together
5. Combine both wet and dry mixtures together. Mix well until all lumps disappear
6. Heat up a non stick frying pan on medium heat
7. Coat the pan with about 1/2 tsp of oil
8. When hot, scope about 1/4 cup of batter into the pan, tilt the pan so that the batter flows and coats the surface of the pan evenly. This should be a very thin coat.
9. Fry until light brown on the under side, flip and fry on the top side as well. (Approx.30 sec each)
10. Serve as is or fill with soft fruits and enjoy.
